Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons basil pesto (jarred or fresh)
2 slices mozzarella cheese (or 1/2 cup shredded)
2 tomato slices (optional)
Directions
- Pat the chicken breasts dry with a paper towel.
- Season both sides of the chicken with salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Add the chicken and cook for 6–7 minutes on the first side until golden.
- Flip the chicken over.
- Spread 1 tablespoon of pesto on top of each chicken breast.
- Place a tomato slice and a slice of mozzarella cheese on top of the pesto.
- Cover the pan with a lid and cook for another 5–7 minutes until the chicken is cooked through and the cheese is melted.
- Serve immediately.
