This juicy chicken dinner looks fancy but uses store-bought pesto for a quick flavor shortcut. It comes together in one pan and is ready in under 20 minutes.

Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons basil pesto (jarred or fresh)

  • 2 slices mozzarella cheese (or 1/2 cup shredded)

  • 2 tomato slices (optional)

Directions

  • Pat the chicken breasts dry with a paper towel.
  • Season both sides of the chicken with salt and pepper.
  • Heat the olive oil in a skillet over medium heat.
  • Add the chicken and cook for 6–7 minutes on the first side until golden.
  • Flip the chicken over.
  • Spread 1 tablespoon of pesto on top of each chicken breast.
  • Place a tomato slice and a slice of mozzarella cheese on top of the pesto.
  • Cover the pan with a lid and cook for another 5–7 minutes until the chicken is cooked through and the cheese is melted.
  • Serve immediately.
